  2. Observed several wings stored in reach in cooler that were bloody, appeared to be par cooked however this is not the normal process according to the manager. Cooking temperature must reach 165F on wings and then cooled. Par cooking of wings is not allowed without specific policy. Manager discarded wings voluntarily. CORRECTED

  1. Observed cutting boards on prep coolers that are scored. Is is required to have surfaces that are smooth and easily cleanable. Replace or resurface.
  2. Observed large stock pot o fbuffalo sauce in walk in cooler with ice paddles, however the stock pot is too large. The area around the paddles was at 52-58F, however the outside of the sauce was still at 110-119F. Time and temperature of start of process was on side so sauce was rapidly reheated to > 165F. CORRECTED. Required to follow an approved method such as shallow pans, uncovered on top shelves in walk in cooler.

      2. Observed: Food handler was preparing salad with bare hands contacting ready-to-eat ingredients. Required: Facility must prevent bare hand contact with ready-to-eat foods. Corrected by education.
      3. Facility staff had already documented their time as a control for 3 types of noodles for 3/22 as being put out at 5:OO PM and discarded at 9:00 PM as well as for the lunch period and it was only 11:00 AM. Required: Must document time as a control correctly.
      4. Found chemical dish machine with an empty container of sanitizer - less than 10 ppm chlorine in final rinse. Required: Final rinse must have 50-100 ppm chlorine. Corrected by changing container and running several times to get reprimed.

      3. Found ice scoop completely buried in ice machine. Required: Handle must be sticking out of ice, if scoop is kept inside ice machine.
      4. Found soda dispenser heads to be dirty. Required: Must clean soda dispenser heads as needed, but at least every 24 hours.
      5. Found the floor around 3 vat sink and dish machine to be dirty.
      6. Found wall beside ice machine to be damaged.

All PHFs that are not properly cold held or hot held must have a time documented for when they items went out of temperature control and discarded 4 hours later.
                  2. Found several PHFs (coleslaw, sliced turkey, smoked meats) with a incorrect 8 day use by date. (Must ensure PHFs are dated with a prep/open date and discarded 7 days later counting prep/open date as day 1).
                  3. Found large chunks of burnt ends that were cooked at 10AM on 3/20/2017 temping at 72F-79F at 3PM on 3/20/2017. Items voluntarily discarded at time of inspection. (Must ensure that when cooling potentially hazardous foods (PHFs) they are cooled from 135F to 70F within 2 hours and then from 70F to 41F within 4 hours).
                  4. Several sanitizer buckets tested at less then 100ppm for quat sanitizer. New sanitizer obtained at time of inspection. (Must ensure quat sanitizer is maintained at a level of 200-300ppm or according to manufactures specs).

                  1. Grout in dishwashing area found in bad repair with grout being worn down between tiles. Must ensure flooring remains easy to clean to help prevent pests.
                  2. Found forks in server station being stored with mouth contact portions up. Utensils moved at time of inspection so mouth contact portions are protected.
