                    1. Observed: Utensils stored in drawers that are not clean. Required: Keep food contact surfaces clean to sight and touch. Once utensils are clean they need to remain clean without getting recontaminated. Corrected by rewashing, drawers were also washed out.
                    2. Observed: Quat water in sanitizer buckets at 0 ppm. Required:Cloths should be in santizer at 200 ppm as manufacturer recommends. Corrected by using correct dispensing unit. Ensure each employee that fills buckets is trained to test the solution each time it is made up.

                    1. Obwerved: Vent hood filters, sides of fryers and equipment have grease build up. Required: Clean as often as necessary to keep them clean. Repeat. A cleaning schedule needs to be followed for long term compliance.
