                  1. Observed: Loaded baked potato soup that started the cooling process on 6/26/2017 tempted at 44F at 7:30AM on 6/27/2017. Corrected on site by voluntarily discarding the soup. Required: All potentially hazardous foods must be properly cooled from 135F to 70F in 2 hours and then from 70F to 41F in 4 hours. Long Term Soultion: Discussed methods to achieve proper cooling by placing small amounts of food in shallow pans, utilizing the freezer during the cooling process, store uncovered during the cooling process, or utilizing a ice bath.

                  1. Observed: No sanitizing test strips for the Victory vegetable rinse. Required: Must obtain test strips in order to be able to test the strenght of the Victory vegetable rinse.
                  2. Observed: Several single use cups being stored in dry food products. Correct on site by discarding cups. Required: If storing scoops in dry food products, must ensure the handles are stored above the food items and that the scoops can be washed, rinsed, and sanitized.
