  • Observed: Employee cutting vegetables with bare hands. Corrected on-site; employee washed hands and gloved immediately. Education provided to manager, manager agrees to monitor employees who are prepping and handling food to make sure bare hand contact with ready to eat foods is prevented.
  • Observed: Several bags of noodles in pan in prep cooler with date reading 5/13/2023; all noodles voluntarily discarded. Ready to eat foods should be discarded if not used with seven days. Corrected on-site.

  • Observed: Two bowls of noodles in three door reach-in cooler covered while still cooling at 50F. Time and temperature were still within required time frame, however method needs to be corrected. Employee placed noodles on ice bath to continue cooling. Finish cooling with ice bath or use walk-in cooler to finish cooling with food item uncovered or loosely covered. Corrected on -site; education provided.
  • Observed: Water observed on basement floor around grease trap and perimeter. Plumbing should be in good repair. Clean water services notified.

  • Observed: Well in dish machine had build up of grease; employee cleaned and corrected on-site. There is build up of lime in the machine. Increase cleaning frequency of dish machine to prevent build up of grease and lime in unit.
  • Observed: Cutting boards on grills and large board used for prep are scored. Resurface or replace so surface is smooth and easily cleanable.

  • Observed several foods in walk-in cooler, 2 door prep cooler on line, and on ice all above 41F. PIC unsure of what the temperature of foods were this morning. No temperature was taken in coolers today. Foods above 41F voluntarily discarded due to unable to verify how long they had been out of temperature. PIC stated they will call someone to come out today to fix the coolers. Move all potentially hazardous foods to other cooler until cooler can hold 41F or below. Discussed keeping temperature logs or getting probe to monitor cooler temperatures. Sending temperature log with this inspection report. Discussed how to properly store foods on ice. Ice must be at the same level as the food. Reinspection required to verify coolers have been fixed to hold 41F or below.
  • Observed employee placing toasted bun on plate for customer with bare hands. No bare hand contact is allowed with ready to eat foods. Employee voluntarily discarded bun.
