Missy was person in charge at time of inspection. This visit was both a complaint investigation and routine inspection. A reinspection of dish machine will be made once facility contacts me that it has been repaired.

  • Observed: The dish machine's final rinse had 10 ppm chlorine. Staff tried to get it to work properly, but were unable to. They were informed they could wash dishes and utensils in it, but would need to immerse in a 50-100 ppm chlorine solution in 3 vat then air dry prior to using.

  • Nonpriority Violations Found: 4
  • Observed: Some counters were not clean, especially the ones by drive up window. Also the inside of dish machine had moderate buildup.
  • Observed: Two wiping cloths were setting on cutting board by prep table. Promptly put into sanitizer at my request.
  • Observed There were several areas of kitchen floor that were not clean. Also the rug to dry storage area has heavy buildup and needs replaced.
  • Observed: There were a few areas of kitchen floor that had broken or missing tiles.

  • Observed cooked potatoes on prep table # 1 at 53F. Discussed using time control and PIC agreed potatoes would be discarded after they have been out for four hours. Also discussed using a metal rather than a plastic bin, as well as using a metal lid to help preserve the temperature. The prep table is near upright cooler and we discussed with PIC utilizing this cooler in order to keep a minimum of product in the prep cooler until it is consistently holding temperature at 41 or less. Reinspection required.

  • Observed: no sanitization strips were available to test the chlorine dishwasher sanitizing solution. Required: A test kit that accurately measures the concentration of sanitizing solutions shall be provided.

  • Observed the following violations: 
    1.) raw meat stored over cooked chicken in walk-in cooler. Discussed that this practice may lead to cross-contamination if the raw meat containers were to leak onto ready-to-eat foods below. PIC had raw meat moved to a shelf with no products beneath it. Corrected on site
    2.) eggs stored over ready-to-eat sauce in cooler under prep counter.  Discussed that this practice may lead to cross-contamination if the eggs were to break and leak onto ready-to-eat foods below. PIC had eggs moved to a bottom shelf. Corrected on site.
  • Observed medicine being stored above prep line.  Required: medicines for employees' use shall be located to prevent the contamination of food, equipment and single-service articles. Medicine was immediately removed form the kitchen. Corrected on site.
  • Observed cabbage being stored on prep counter at 50F and was not under time as control. Potentially hazardous food shall be maintained at 41F or less. PIC moved cabbage to the prep cooler. Corrected on site.
  • Observed dishwasher sanitizer concentration was 10ppm. Concentration should be 50-100 ppm. PIC stated he would call for repairs to the sanitization equipment. Reinspection required.

  • Nonpriority Violations Found: 3
  • Observed cooked chicken had been covered with a plastic grocery bag. This bag was not designed to prevent cross-contamination and is not a food-grade approved storage item. PIC removed the grocery bag. Corrected on site.
  • Observed dead inspects in dining room and restrooms. Inspect traps contained many dead inspects and did not appear to have been changed recently. Dead pests should be removed from the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests.
  • Observed low water pressure, no hot water in women's restroom and employee's rest room. Plumbing system should be maintained in good repair.
