  • Observed: Dishwasher has zero ppm chlorine. Required: At least 50 ppm chlorine. Make sure the machine is tested in the morning to prevent this from occurring. Company contacted immediately.
  • Observed: Ten small salsa containers in door of wait staff cooler at 45F. Required: Cold hold potentially hazardous foods less than 41F. Corrected by voluntarily discarding. The rest of the cooler is <41F. Do not store food in door.

  • Observed: Vent hood filters in middle of hood have build up of black residual. Required: Clean as often as necessary to keep clean. Cook agrees to increase cleaning frequency.
