  • Observed: Fried chicken and chicken in hot case holding at 120-130F. Chicken removed and reheated to over 165F in oven. Hot case temperature increased by manager. Corrected on-site.
  • Observed: South end of deli meat cooler holding deli meats and other potentially hazardous food at 42-44F. South end holding at 41F as required. Cold held PHFs should be held at 41F or lower.
  • Observed: Pans, ladles and tongs stored with food debris still on food contact surfaces. Food contact surfaces should be clean to sight and touch after cleaning and sanitizing. Corrected by rewashing and sanitizing. Tongs need an alternate storage spot as the wall is ont a sanitized surface. Corrected on-site.
  • Observed: Several flies landing on food and food contact surfaces is deli slicing area, fryers, and dish room. Contact pest control and eliminate harborage conditions.

  • Observed: Wiping cloths stored in solution at 0-100 ppm quat. Manager obtained sanitizer from alternate 3-vat sink. Corrected on-site. Education given on testing solution each time it is dispensed.
  • Observed: Non-food contact surfaces of fryer vent hood and filters have heavy grease build up, equipment around the fryer area and shelving also has build up of grease and/or food debris. Increase cleaning frequency to prevent the accumulation of grease and debris.

  • Observed: Bag of spinach and two pans of sausage store in top of prep cooler above fill lines holding at 52-68F. All other items in prep cooler below 41F as required. Corrected by voluntarily discarding spinach and sausage. Education provided.
  • Observed: Eggs on counter at grill area at 60F; lettuce and sliced tomatoes holding in condiment iced unit at 50-52F. Eggs voluntarily discarded; lettuce and sliced tomatoes placed on time control. Education provided.

  • Observed: Tongs stored on table next to oven with grease build up; sheet pan of fries stacked on top of another sheet pan of fries with no barrier in between the bottom of pan and fries. Tongs taken back to be washed, rinsed and sanitized; manager placed sanitized pan in place to hold tongs. Fries voluntarily discarded. Corrected on-site.
  • Observed: No hot water at deli hand sink. Manager discussed with staff to use kitchen hand sinks; there are 3 hand sinks in this area total, there is hot water available at the other two sinks. The deli sink is on an instant hot water heater. Manager contacted plumbing company immediately.

    Spoke with Scott, we discussed reheating requirements, cooling requirements HACCP processes and documentation of processes. We also went over management oversight recommendation and I provided COVID-19 toolkit for restaurants. We also discussed what their alternatives would be if they were not able to obtain gloves. This inspection was a verbal review of food safety practices and procedures. No violations noted today.

  • Observed: spinach (52F) and hard boiled eggs (44F) not properly cold holding at salad bar; product filled over load limit. Required: PHFs shall cold hold at 41F or below. Corrected on site by lowering load limit and voluntarily discarding food.
  • Observed: potentially hazardous salads date marked for 8 days in walk in cooler. Required: PHFs shall bear a 7 day discard date (date prepped + 6 days = discard date.) Corrected on site by properly dating salads.

  • Observed: mini quiches not properly reheated for hot holding (temped 117F). Required: PHFs shall be properly reheated for hot holding. Corrected on site by reheating product to 165F.
