Discussed checking dish machine with test strips several times per day to make sure it is at 50 ppm chlorine as required. Repeat.

  • Observed: Dish machine only reaching 80F during wash cycle. Temperature should be no less than 120F. Manager agrees to use 3-vat sink to ware wash and sanitize until machine is repaired. Repeat.
  • Observed: Hot water faucet is leaking at 3-vat sink. Plumbing should be in good repair.
