  • Observed the following: -In Prep cooler by toaster: turkey 50, brie 60, tuna 48, cut lettuce 50, ham 50, and air 47. -On counter next to prep table: house made pesto at 47F Required: Potentially hazardous foods must be cold held at 41F or below. Corrected on site by discarding foods listed above due to them being in cooler over 12 hours. Large bins in cooler were moved to bottom shelf to avoid restricting air flow, call for service made. Disussed not storing food on top of bins in prep cooler and pesto was placed in bin in top of prep table. Pesto had been on counter less than 2 hours. Cooler temperature at end fo inspection: 41F.
