  • Observed: Seasoned boiled eggs in quarter pans with condensate on lids and at 51F. Cooks relayed the eggs were made last night. Four quarter pans of boiled seasoned eggs voluntarily discarded. Education given on ice bath cooling method. Corrected on-site.
  • Observed: Slide cooler holding various potentially hazardous foods at 43-48F. Beef, salmon, tuna, calamari, tako, mussels, tuna, egg rolls, pork and chicken voluntarily discarded. Items that were thawing such as shrimp at 36F moved to alternate cooler. Owner called repair company immediately and agrees not to store any PHFs in the unit. Follow up will occur 9/5/2023 due to the Monday holiday.

    Items form routine inspection have been corrected: thin probe thermometer now available, quat test strips available, non-food contact surfaces have been cleaned and a cleaning schedule is in place and stainless steel panel is now behind the three vat sink and sealed to wall so surface is smooth and cleanable.

  • Observed: Wiping cloths stored in water, zero ppm quat available. Corrected by remaking solution to 200 ppm quat. Education provided.
  • Observed: No thin probe thermometer available for cooks use; the thermometer available was broken. Use a sanitized thin probe thermometer to check cooking temperatures.
  • Observed: Heavy build up of food debris and grease in and around equipment such as bottom of slide reach-in coolers and fryers, etc. A cleaning schedule needs to be put into place and increase cleaning frequency.
  • Observed: Walls behind 3-vat sink are in poor repair and panel behind fryer units is bowing, separating from wall. The physical facility shall be in good repair.

  • Observed dish machine chlorine sanitizer at 10 ppm chlorine. Corrected on-site. Staff primed the machine, corrected to 50 ppm chlorine.

  • Observed build up of grease and debris on equipment such us shelves, dish machines, outsides of coolers, trash cans, etc. Increase how often these items are cleaned to prevent the build up of grease and debris. A daily, weekly and monthly cleaning schedule will help prevent this from happening.
  • Observed cutting boards on prep cooler and prep stations scored. Resurface or replace.
  • Observed walls behind 3-vat sink and hand sink in poor repair. The dry wall is coming through and/or 3-vat sink is separating from the wall. The walls need to be smooth and easily cleanable, in good repair. Correct by 4/20/2023.
