  • Observed: Cook does not have beard properly restrained. Manager agrees to order beard nets.
  • Observed: Bar 3-vat sink set up incorrectly in wash, sanitize, and rinse order. Corrected on-site to wash, rinse, and sanitize.

  • Observed: Thin pork holding at 88-91F on flat pan on grill top that was not on. Required: Hot hold above 135F. Corrected by reheating to >165F. Manager added pork to time control policy for future.
  • Observed: Quat solution ovre 400 ppm. Required: Follow manufacturer's directions of 200 ppms on label. Corrected. Manager had employees use 1/4 of a tablet.

  • Observed: Sushi chef keeping single use gloves on cutting board. Required: Gloves should only be used once, not reused.
  • Observed: Rice scoop in water on counter. Required: Store in cold ice below 41F or hot water above 135F. Corrected. Manager agrees to use ice and change frequently.
  • Observed: No test strips available for chlorine for dish machine or sanitizer for quat buckets.
