  • Observed: Heavy build up of grease around fryer vent hood frame and inside frame where filters are missing. Heavy grease build up on sides of fryers and on bottoms of fryers. Grease build up on UHT and microwave shelf. Correct by 9/15/2023. Cleaning frequency needs to be increase to a frequency that prevents the build up of grease and debris.

  • Observed: Door sweep was replaced on back kitchen door, however the sweep is now bent and there is daylight coming through in two locations at bottom of sweep. Repair sweep so the door is tight fitting.
  • Observed: Small walk-in freezer compressor has condensate leak and build up dripping onto pan on top shelf. All boxes under compressor moved immediately. Repair compressor.

Required: Equipment should be in good repair; do not store food below compressor until repaired. Boxes of hamburgers were immediately moved. Manager agrees to send documentation of repair.
  • Observed: Side of back door is not tight fitting from ground up to three quarters of the door and frame. Required: Door should be tight fitting to prevent pest entry.
  • Observed: Floors beneath fryers have build up of food debris and grease. Required: Clean more frequently to prevent build up of grease and food debris.
  • Observed: Build up of grease under fry station area and on hot hold unit shelf above make line. Required: Clean more frequently to prevent build up of grease and debris.

  • Observed: Significant buildup of grease, food debris, dust, and trash under equipment, shelving and in play equipment area. Required: Physical facilities shall be cleaned as often as necessary to keep them clean.
  • Observed: Cut tomato at 67F(not marked for time as a control), and cut lettuce at 49F (not marked for time as a control). Required: Potentially hazardous foods marked for time as a control must be marked when removed from temperature control for a time not to exceed 4 hours. Foods must be discarded at the end of 4 hours and may not be reused for any other purpose. Corrected during inspection by marking for correct discard time.
