  • Observed corn dogs at 131F under heat lamp area with no time marked or timers being used. Employee stated they use time of 1 hour on corn dogs and discard after 1 hour. Discussed time must be marked when food is cooked, for a discard time of no more than 4 hours. Employee unsure of how long food had been there and voluntarily discarded. Employee said facility will be marking time as a control from now on since foods are not staying at 135F or above under heat lamp area. Corrected on site.
