    On site for compliance check to verify walk-in cooler is holding 41F or below or no potentially hazardous foods are being stored in it. Walk-in in storage area(walk-in #2) holding 59F. Walk-in in dish pit area(walk-in #1) holding 41F. Cold holding violation has been corrected. All potentially hazardous foods are being stored in walk-in #1. Walk-in #1 sufficient to support menu. If issues with cooling or cold holding occur refrigeration space may be reevaluated.

    On site for complaint of walk-in not working. While on site observed walk-in at 52F-54F. All potentially hazardous foods moved or discarded until walk-in can maintain 41F or below. Compliance check required to verify walk-in can hold 41F or below.

  • Observed multiple foods in walk-in cooler in dry storage area not at 41F or below (please see food temperatures list). Walk-in holding 51F-54F. Employee unsure of how long foods had been above 41F and was not sure if anyone had taken a temperature of the unit today. Foods just delivered were able to be cooled safely using walk-in located in dish pit area(holding 34F). Observed all other potentially hazardous foods from walk-in located in dry storage discarded voluntarily. Discussed using the walk-in located in dish pit area until repairs can be made to walk-in located in dry storage area. Walk-in located in dish pit area is sufficient to support menu.

  • Observed chlorine sanitizer not testing on test strips. No available chlorine in sanitizer bucket. PIC stated they ran out and are having someone bring some in now. Sanitizer must be available for wiping cloths and dish machine during all hours of operation. Chlorine sanitizer must be between 50-100ppm. While on site PIC called company that services dishwasher and the employee said he was on his way right now to replenish their sanitizer.
