Priority Violations Found: 2Observed: Dishwasher not sanitizing. Sanitizing solution at dishwasher did not register with chlorine test strips. Temperature test strips also did not register, indicating that dishwasher temperature is not adequate for hot water sanitizing. Employee called in repair technician for dishwasher during inspection. Corrected on site.-Observed: Bait cubes uncovered and not stored inside a tamper-resistant bait station. Bait cubes discarded by owner.

Parasite documentation will need to be provided by email or dropped off at the office by 5:00 PM on 11/9/23.Observed: Time as a temperature control being used for the rice behind the sushi counter. Rice had been sitting out since 10:30 AM, and rice noticed at 3:00 PM, outside of the four hour time as a temperature control timeframe. Rice was voluntarily discarded by employee, corrected on site.Observed: Moldy jalapenos found in walk-in cooler. Jalapenos discarded by employee. Corrected on site.Observed: Walk-in cooler has wastewater dripping from seam on ceiling. Water has dripped onto walk-in cooler floor as well as directly onto food itself, contaminating the following:- X1 box of ginger- X2 boxes of cream cheese- X1 bucket of broccoli- X2 cases lettuce- X2 boxes of potatoes- X1 bag of lemon- 1/2 bag of lime- X1 box of egg roll ups- X1 bucket of soy sauceAll of the foods listed above were discarded by owner.Observed: Shrimp stored above ready-to-eat sauce in one-door prep cooler near sushi prep. Priority Violations Found: 1Observed employee rinse hands in 3 compartment sink after contamination with raw meat. Observed person in charge rinse hands in handwashing sink before putting on gloves to make sushi order. No soap used in either occurrence. Education provided on proper handwashing. Handwashing must occur in handwashing sink. Handwashing must include wetting hands, applying soap, scrubbing soap on hands for 15 seconds, rinsing hands, and then drying with single use paper towel. Corrected on site by having both employees remove gloves, wash hands, then put on clean gloves before returning to work.
